Cookie Monster Cupcakes!

Who would have thought Cookie Monster cupcakes could be so much fun and easy too!  Every time we have a cake decorating class at our shop the instructors are so inspiring, they not only teach the class but they share their ideas on the latest and coolest thing they have just come across.  Hannah just returned from a trade show with news of flavoured fondant, bubble gum, blueberry… so by the end of this week we should have this great new product available at the shop!  Barb was sharing how simple it was to make Cookie Monster cupcakes recently so my niece and I decided we would see if we could easily produce 24 cookie monsters for an upcoming family gathering….

Sometimes shortcuts are good so our venture began with one, Duncan Hines spice cake and chocolate cake.  These mixes produced more than the 24 mini cupcakes we needed, but a little extra never hurt any family function yet.  We also pulled out some frozen Chocolate chip cookie pucks and baked those , apparently Cookie Monsters favourite cookie.  While the cupcakes cooled ( necessary so that Cookie Monster would not look like a drowned… cookie monster) we prepared a basic Butter Cream Icing photo 1 (4)

Ingredients

Makes

About 2 1/4 cups of icing.

step 1

In large bowl, beat shortening and butter with electric mixer until light and fluffy. Beat in vanilla.

Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry.

Gradually add milk; beat at medium speed until light and fluffy. (It was at this point we thought we had better do some taste testing!!)

step 4

For thin (spreading) consistency icing, add 2 tablespoons light corn syrup, water or milk.

 

Once the icing reached the consistency we needed, fairly stiff, we added Cookie Monster colour, the royal blue gel from Wilton.  We added a little at the time, using a tooth pick, to reach the perfect blue.  Once this was done the secret tip was put on our icing bag, (wilton tip #233).  We lay down some parchment paper and begin practicing our technique on making perfect cookie monster fur. practice Once we felt we had this mastered we began with the cupcakes.  First we spread some icing onto the cupcake to give the “fur” something to stick to. decorating They were looking fantastic but when we put Cookie Monsters googly eyes in place, wow, it was Cookie Monster staring back at us! The broken cookie pieces we place in his mouth made it perfect. cookie monster face We made a few more and my niece keenly observed that if we had made some of the icing red we could easily do Elmo too.  He’d have to wait this time though as we had coloured all the icing blue (and our tongues were picking up a blue tinge too). Presentation is always half the battle so we prepared some plates and used Chocolate rocks as the back drop for our cupcakes. cookie monster The cupcakes looked great, they were easy to do and we had a lot of fun.
